Stock issues at this time of the year doesn't make much sense.

Possibly Sony banked on the Star Wars Battlefront II bundle outselling the Fool's edition by far and thus mostly just produced that version. When the controversy around the game came and many people avoiding the game Sony was unprepared for the much increased demand of the standard version. Sony probably has a big stock of the Star Wars edition, but none of the standard edition anymore.
