It's not like she's the one scouring Hyrule for ancient McGuffins and eventually killing Ganondorf.

Because a game doesn't have to be named after the main character, Zelda is the central figure everything revolves around as each incarnation of her is the reincarnation of the Goddess Hylia who triggered the Tri-Force cycle and as explained in Zelda 2 anytime the is at least one Princess in the royal family they're named Zelda to honour one of the earliest Royal Princesses who passed away.
