The symbols represent elements; if you do special attacks with those elements in the combinations shown, you can disable one of the enemy's abilities, e.g. here fire + fire + fire = seal self-destruct, fire + water + ice = seal shackle blade.

That seems very useful, kind of like the special Monado attack in the first game. Liking how the devs are chaning the battle system.
