Rayman Legends on Switch has a small file size by using heavy compression hence the long load times on Switch. Much smaller than most other formats but in the case of Mario Odyssey I don't think its an issue at all and doesn't mean the game has been cut-down or compromised in anyway. It was pretty much expected that Nintendo's own games would work with the limited storage of Switch but third party games and ports would be under more pressure. Same was true of wii u, wii and gamecube with Nintendo's own games being comparatively small.

Mario 64 was something like 8 megabytes in size and has a huge amount of content.

Ratchet and Clank on PS4 is over 26GB though. But that game is on another level compared to other cartoon game when visual fidelity is concerned.
