Completely possible. Also, the NS does not use a hard drive, it uses flash memory like your phone does. However I doubt they will increase it any time soon.

There are massive flash shortages right now and that makes them hard to buy in bulk, even when you can the costs are quite a bit higher than last year (still ridiculously cheap compared to say 5 years ago and a small part of the bill of materials, but that adds up). Supposedly it is one of the reasons Nintendo is failing miserably with stock. 64GB chips are likely even worse due to the new iPhone.

Flash won't be easier to find and costs won't be decreasing on a large scale for at least a year according to the latest reports.
