The thing is both Galaxy and BOTW got those scores by not just being exceptional games but by also redfining certain aspects, Galaxy redefined the concept of 3d platforming by using gravity mechanics to open up new design approaches while BOTW redefines the approach to open world games with a design that not only gives absolute freedom but changes what you'd expect from a sandbox game.
Odyssey would not only have to be one of the best platformers released to beat both these games but also have redefine a core aspect, that's something that's not an easy task at all.
