I need 8k like I need a hole in the head (as my parents would say lol). I'm still VERY happy with the way 1080p looks on my monitor for pc and my projector for Switch. Not to mention, monitors not being very large I don't feel it would be worth it to make that high of a resolution unless it was so mainstream that it was cheap.
As for my projector, thankfully Nintendo doesn't make products that can utilize cutting edge resolution like 8k is right now, so they probably won't have a device that can actually look better on 8k for another 2-3 generations (maybe 10-15 years from now?).
