Depends on the console really.

NES = 3
SNES = 4
N64 = 7
Gamecube = 9
Wii = 7
WiiU = 3
Switch = 2

PS1 = 2
PS2 = 2
PS3 = 2
PS4 = 1

PlayStations aren't really multiplayer consoles so you don't really need to own many controllers.
