Usually those dates are ass-covers, rather than true expirations.
It's usually fucking obvious when broccoli or guacamole or anything has gone bad, and sometimes it is long after the expiration date, other times not so long; it depends on storage and quality.
And it's not like it will kill you if you accidentally eat something expired. If you are eating processed food from US/China (transfats, corn sugars, preservatives, MSG, and other mildly toxic flavour additives), you are doing FAR more damage to your body; and it is why populations that have those foods have much higher and younger rates of heart disease, brain degradation/dementia, and cancer.
At worse, a bit of rotten food will make you shit hard. But probably no effect.
