You got burnt out out of the triple A scene.  I on the other hand got burnt out of cartoony games when I was around 12 and move onto more mature experiences. 

Switch graphics look plenty nice to me. They may not be PS4 calibre but they meet my needs in the same way as PS4 meets your needs despite not looking as good as a high end PC.

And I'd actually argue that Splatoon and Mario have a lot of appeal to adults; in fact, I'm pretty sure the majority of the people playing those games are adults, since a huge chunk of the Nintendo fanbase are gamers in their 30s who grew up on the NES, SNES, and N64.

Oh definitely.  I grew up on the PS1 and loved cartoony games targeted at kids too.  I'd still play the odd one for the nostalgia such as the crash remaster next month but for the most part I've grown out of the kids games.
