It'd be more accurate to say you buy a sequel every two years, and the subscription pays for the large content updates between those sequels, the game's general large budget size (the latest expansion had a larger budget than many new AAA games lol), and ensures a good general experience (e.g. them giving EU its own servers, their gradual shift to centralised worlds, etc).
I totally understand why it's not a model that appeals to you, especially if your game time is limited to specific days, but for those that enjoy what FF14 offers and want a consistent supply of that content at its best, it's amazing value for money.

But I get for example an actual new game 2/3 years from Naughty Dog built at a ridiculously high quality (that improves every time) paying them just once for each of those, instead of doing that and also paying more every month between those. It doesn't look like amazing value for my money, at all.
Gaming is alreasy expensive enough the way it is (described in the ND example) and having to keep paying to keep playing something I already bought is just not for me, even more as yeah, 4-5/7 of my subscribe payment would be going to waste as well.

As i said, i understand why it's not for you, but it shouldn't be hard to understand why it's good value for others. FF15 cost me £45, and i played it for 110 hours (which i consider a great cost to time ratio). With FF14 I've overall spent £230 (the equivalent of 1.25 new games a year), and I've played 1,952 hours. I'm effectively playing a series that releases a new entry each year, and that new game provides me with on average 390 hours of content. So while it might not be for you (and that's entirely fair), it should be clear why it works for people like me. If FF14 didn't exist, that 390 hours a year would cost me considerably more.
