That's not entirely true. Minimum specs means it won't have to fit low power rigs if it can't or they don't want it to. Something I know all too well since my computer often fails to meet minimum specs of new games

Yup, a lot of  PC games are requiring a minimum of 8gb of ram, with the Switch only having 3gb usable for games as opposed to the 5gb available on xbo/ps4 that'd probably be one of the biggest challenges in porting the game to Switch, especially with it's lower memory-bandwidth.
