Non-motion in general is as you'd expect, faster easier and more reliable. This is most notable with movement when trying to change directions quickly and moving forwards and backwards. If you meant Joy-Cons in handheld mode or on the grip versus the pro controller, then it's actually pretty much the same. Although on the Pro Controller the left stick is easier to reach, and when using the ZL/ZR buttons to punch it's less likely to accidentally trigger your rush attack.
