Well, take for example Horizon beating BotW in Europe by a large margin when it`s pretty much the opposite in the rest of the world, in some cases the game sold more than the console. The interest just isn`t there yet, sure, with some very Strong titles it could be reversed, but Switch seems to don`t be such a phenomeon there.
And the not in stock non-sense, well, it sold what it sold, and if even Nintendo is not much confident or not care about sending more units to Europe instead of Japan and NA, when Europe is pretty much the biggest console Market right now.
