"Episodes" was a mistranslation. It's a multi game series like the Final Fantasy XIII series. Each game will be a full length standard FF game, and may feature different mechanics. The story of the first few games will end with a "To be continued" like in FFXIII-2 did.
There's no reason why open world would not work in multiple separate full length games.

"Square Enix has clarified the episodic structure of its Final Fantasy 7 Remake, stating it will be comprised of multiple, full-sized games instead of a series of smaller episodes.

They can call it what they want. It is episodic. You will not finish all of FF7's story in the first part. It's like calling the Hobbit a trilogy. It's not a trilogy, its one book broken up into three movies.

Their full on game is me expecting a crap ton of fetch/monster quest inside midgar for part 1, episode 1, whatever you want to call it.
