Mario Kart is one of Nintendo's most important franchises and they'll want a new entry for the Switch. The system-selling potential of a new Mario Kart is simply too hard to ignore.
While Mario Kart 8 Deluxe looks like a great port and will be "new" to a lot of Switch owners, fans will want an entirely new game in a few years.
Lastly, I very much doubt that the future of F-Zero and Diddy Kong Racing (though they probably wouldn't release it the same year as Mario Kart) depends on whether or not Nintendo makes a new Mario Kart and if it does then those franchises are screwed because if forced to choose Nintendo won't pick F-Zero over Mario Kart 9.
