I don't think there's really a "Best Armor", it depends on what you're looking for and if you consider the look important or not. With that in mind, my top 3 armors are (in no particular order):
1. Hylian Armor set; you can find this set in Hateno Village and, despite the lack of a particular bonus, once upgraded it provides beter defense than almost any other set in the game. I don't really like the helmet so I use the Cloack instead. It's also one of the cheapest and offers best value for money of them all.
2. Ancient Set: It provides very high physical defense, extra defense vs guardians and has a high bonus attack if you're using guardian/ancient weapons. You can get it in the northeast lab, but it is really expensive and requires rare stuff from guardians. Also, the helmet design sucks.
3. Barbarian Set; You get the pieces for completing the Lomi mazes/labyrinths in Northeast Akkala, east Gerudo and northeast Hebra. You'll find sets with higher defense, but this one provides bonus attack when equipping the whole set.
For Swords 'n Shields, you can get the best of them by defeating Lynels. Once you've defeated several Lynels they will show up with better weapons and equipment, so keep killing them until you get the savage weapons, which inflict the highest damage of the "easily found" ones.
