The grip that comes with the console doesn't charge them.

It depends on how many you intend to use. I have four joycons so it made sense to get a charging grip so as to be able to charge all four at once (two with it and two while attached to the docked Switch). Given the joycons each have a battery life of around a full day, though, if you only intend to use two you really don't need a charging grip as you'll never have a battery life issue (assuming you remember to dock the Switch when you're not using it).

As for the AC adapters, I just tested and yes, the one that comes with the console also plugs into the chargeable grip and switch tablet.

Btw, if you're looking into accessories you might want to check these out, I rather like them as they make each joy-con rather comfortable to hold individually as they take the shape of a more conventional controller.
