Pick one from Ubisoft and you've seen all from Ubisoft. The most famous examples are probably the Assassin's Creed series (pick any but the first one) and the Far Cry series (FC3 or newer). Skyrim is also a nice choice, even though it's getting old. Personally I also have to recommend Metal Gear Solid 5: The Phantom Pain (but not necessarily Ground Zeroes), even though the game is a bit incomplete. Other than that, I'm not sure I can recommend anything since I haven't played a ton of more recent open world games.
