I don't think I or the OP suggested that you'd buy a Switch for these games. The premise is that you have a switch regardless of these games and is it worth $60 to buy MK8D (or related prices to other games).
For your scenario, I did point out that these are value based and of course subjective to each.
For me, I think most customers of the Mario Kart series see high value in quality battle mode and I doubt an exceedingly high % of MK8 owners have bought most or all (maybe any) of the previous DLC. Total generalizations without data to back them up. But, with those assumptions, the value proposition is very good for MK8D. Which, honestly, is the reason any company re-releases a 'deluxe', 'hd', or 'goty' edition of a game at full price.
Out of all the the re-releases we're seeing on Switch, it seems like MK8D is by far the most likely to be re-bought by previous game owners. There really is a good amount of new content plus much that may have been missed by that buyer.
