Anyway, to get heart and stamina increases, you pray at goddess statues. They are located in most - if not all towns - as well as the temple of time in the Great Plateau. I don't think you can get back to the plateau without fast travelling, but I might be wrong. 

Ah cool, just need to get into a town then. I was at one in the Gerudo desert yet they wouldn't let me in. I was about to do the quest to get in but got sidetracked by that big mountain range daring me to scale it. 4 hours later I'm escaping the cold down the other side into unknown territory. It will be a while until I get back to Gerudo desert, another town will have to do.

I love exploring and this game is so rewarding for it. I chose the stamina upgrade when leaving the great plateau and it has come in very handy as well as the stamina restoring food I made while there. Finding the right spot to make it to the next ridge with only a sliver of stamina left, fun. These mountains are really high, then fly to the next peak :)
