I think their biggest hurdle is to get the new engine running (since Pokémon was never a game heavy on graphics). Maybe they can test their new engine with Pokémon Stars (if that turns out to be real) and then build on that with a new generation.

That seems pretty unlikely. I can't see there only being a 2 year gap between gen 7 and 8. Not sure I'd even want a gen that quick. It would be good to get more Pokemon stuff sooner I guess, but you'd have to wonder if they rushed it to get it out so quick and because of that it could end up a subpar Pokemon game.

Agreed, there's no way they'd abandon Sun and Moon that fast after it has been the most sucessful Pokemon game in a long while. Whenever the proper next gen Switch Pokemon game will release I'd expect a complete overhaul, with a proper gigantic 3D world, and finally 3rd person camera. So that will take a few years at least. They can't make that in a year.
