Yes, but anyone who wants a WiiU already bought one. Not many folks will see Breath of the Wild on WiiU and say, "I guess I'll go out and buy a discontinued system for this one game." They'll say "I need this game in my life so I'll buy it on the system with a future."

Correct.  Though those who have huge hard-ons for Zelda most likely are part of the bunch that bought a Wii U.  Again, I am not saying that they aren't going to have a successful launch, just that the line-up is weak because it hinges on one game.

Think of it like a Brazillian steakhouse restaurant opening in an area that is primarily full of vegetarians.  Sure they have a salad bar so the vegetarians are going to eat.  And they are new and people like that so they are going to check it out.  After that though, where is the appeal?  Especially when you have a few other restaurants in the area that have all the veggie dishes you want.  If they don't cater to the market around them they are going to fail.  If they put out one killer vegetarian dish every 6 months to a year people are going to forget about them and move on.  They keep putting them out there week after week and month after month though and they can have their cake and eat it too.
