Pokémon Gen 7: Third Version, Remakes, or Sequels?

Um, not really.

Gold & Silver were set 3 years after Red & Blue, while Black 2 & White 2 were set 2 years after Black & White.

That's because in real life, the japanese releases of the games were 1996 (Red & Blue), 1999 (Gold & Silver), 2010 (Black & White) and 2012 (Black 2 & White 2). Therefore, if a Sun 2 & Moon 2 ever happen, they're going to take place as much time after Sun & Moon as in real life - which I doubt can be 2 years, as I personally can't see Nintendo releasing any more major 3DS games in 2018.
