The problem with games today is, that you don't die that easy (aside from some cheap deaths). What you describe isn't the game being hard, but the opposite. The game flows easilly, and when there's challenge, the jump feels too big and you die. You don't want to start again because sitting trough and maybe dying again isn't worth it.

I think Metroid Other M, for example, took 45 minutes before encountering  the first challenge in the game.

Bucky O Hare is awesome. Don't know how many times I beat it.

 

You should try " Battle of olympus" on nes. It uses the Zelda2 engine and is also pretty good and really challenging game.
