The SoC is a relatively small price of the pie, Nintendo and nVidia have agreements in place for pricing that other companies are likely not privvy to.
It should be competitively priced with Tegra X1 in terms of fabrication.

Besides, the Switch is already expensive for the hardware you get. (6.2", 720P screen? Common Nintendo. This is 2017.)
The least Nintendo could have done is offered the handheld the best performance possible for the form factor if they were going to cheap out in other aspects but still charge a premium price.
