Zelda BOTW is 900p Docked, 720p Undocked (Switch)

A game can be natively rendered at 900p and then output at 1080p so both can be true. There isn't a 900p hdmi resolution so it has to be upscaled anyway and the box can legally state 1080p even if native resolution is 900p. There is no conflict both can be true.
