Countering something won't allow your opponent to just shield or dodge right back. Not to mention some attacks push you back when you shield. Countering can't be shoved back by an attack that way. Countering also does damage in proportion to what you were hit by. So you not only hit back instantly, you hit them harder then they'd have hit you. Least for Marth and Ike anyway. Pretty sure Peach and Lucario's works different when they deal damage.
