Why is everyone freaking out about the Switch?

That is not what they said.
They said they look at each title individually, and see if the hardware (and audience) of the console is a fit for what they are trying to do.
It was the interviewer who gave Xbox One's performance as an example. To which Bethesda said "then we would consider it". He would have said the same if the interviewer gave PS4 Pro as an example.

Keep in mind that the game in question here is probably Skyrim Remastered. An enhanced port of a Gen 7 game.
If the Switch can handle it, they would consider it. That does not mean that they plan on making their next current gen title work on Switch.
