I think it really depends. Games like Mario Kart couldn't hit 1080p because the graphical choices Nintendo made. Smash Bros at 1080p definitely had an impact on visual shortcomings in the game, so in both instances I think the  target resolution was a design choice. The most sensible thing to do is to approach each game individually and see what will help the experience.

Its very simple, Nintendo with Wii U targeted HD 720p gaming and they achieved that, all their games are 720p only Zelda's WW/TP HD and Smash Bros are 1080p games,so with those games they make higher resolution than its standard 720p. With Switch they most likely targeting 1080p for their games, that doesn't mean every single Switch Nintendo game will be 1080p, but I think 95% of their games will be 1080p.

Yup, it doesn't make sense to have a standard resolution for all Nintendo games, that would require them to purposefully hold themselves back in other areas.

Actually totally make sense to have one standard resolution for all games, for Wii U standard resolution was 720p and only only 3 Nintendo games are 1080p from which 2 are remasters, while for Switch most likely standard resolution will be 1080p.

720p is the bare minimum of HD and the bare minimum we would expect from a console released in 2012. By that time almost all 360/PS3 releases were native 720p. However 1080p still isn't the norm in console gaming. The jump to 1080p could negate much of the performance advantage the Switch can offer over Wii U as it requires more than 2x the proccessing power. 1080p is kind of luxury target that I think they won't mind missing as much. For example I certainly don't think the next Zelda will target native 1080p whereas I fully expected BOTW to be 720p on Wii U....but time will tell, I don't doubt many Nintendo games will be 1080p but I don't think it'll be the 95% figure.
