But you and I, and the rest of member of this site and others, are the minority and we have top accept that we don't represent the whole gaming market. Cancelling the Wii U version of BotW may mean them losing a few hundred consumers (and it remains to be seen how many of them would end up buying the new console at a later date), but if that means selling several thousand units more of Switch to the general users, they may find that it's worth it.

I dunno, it wouldn't just be a matter of pissing off Wii U owners, the company would also lose a great deal of credibility in the eyes of gamers. They would be proving themselves as liars and making any future promises they make untrustworthy. Given their perilous position at the moment, I think they would suffer considerably from the amount of bad PR such a move would attract. That doesn't mean they won't do it, but it would be a foolish move. Then again, they've made plenty of foolish moves before.

Nintendo's image would be hurt by a move like this, but I don't think it would be as bad as you think, specially if they do it at the right place and moment. For example: if they announce it during the Switch conference on Jan., it would only be another article/headline that would soon be swallowed by the many other articles (positive or not) about the Switch.

I would notice it and it would still piss me off, but I can't say the same for the majority of people on this site, and even less for the people outside the internet.
