I'd like to see a modern update / remastered version of Shadows of the Empire. It's a great story and the N64/PC release does not do it justice. I'd love to see a very cinematic version of the game that is more movie-like since an actual big screen adaptation is pretty much impossible as the original cast are all old farts now.
Besides that game, I'd love to see either updated or new versions of Blast Corps and Body Harvest. There's a ton of N64/PS1 era titles that were pretty rough around the edges when originally released but were still solid games that deserve a new life.
