The problem is: they can't afford to wait a few years. They need to have a steady steam of games coming... especially during the first year. And those enhanced versions help filling gaps, after all it's not easy to keep pumping 1-2 games every month after release.
And it's not like those versions will after games like 3D Mario, Pikmin 4 and Zelda (games you listed). I too am much more excited for new games, but we have to understand the need for a couple of enhanced versions here and there.
