Mainline Pokémon, The Legend of Zelda: Breath of the Wild, a 3D Mario platformer, Mario RPG: The Invasion of the Rabbids and Pikmin 4 in the first year of any console would be great - never mind a Nintendo console. Sprinkle a couple of remasters on top of that like Splatoon and Mario Kart and you have a very strong line-up of games that cater to pretty much everyone. Namely an action adventure game, some RPGs, a real time strategy game, a 3D platformer, an online third person shooter and a racer.
For the people who are outside Nintendo's current ecosystem Mario Kart and Splatoon will be brand new titles, something which you seem to ignore. Just because they didn't buy a Wii U doesn't mean they're not interested in those games. There are many 3DS owners who never bought a Wii U for instance (sales for Super Mario 3D Land are about twice as high as the sales of Super Mario 3D World).
The Wii U had a terrible first year in comparison: Nintendoland (not nearly as succesful as Wii Sports was), New Super Mario Bros. U (it looks just like the Wii version, but in HD), Wii Fit U (the Wii demographic had already moved on, unbeknownst to Nintendo),, The Wonderful 101 (obscure niche game), The Legend of Zelda: The Wind Waker HD (a remaster of a GC game), Game & Wario (shovelware), and Pikmin 3. I'm not counting Super Mario 3D World as that would be the beginning of the second year for the Wii U.
The only games I "bought" from that list are The Legend of Zelda: The Wind Waker HD (never played the original) and Pikmin 3 (I got it for free during the Mario Kart 8 deal). That's quite telling, don't you think? Even a hardcore Nintendofan like me could only find two Nintendo games to buy during the Wii U's first year... I also bought Rayman Legends and Batman: Arkham City, but I'm strictly talking about Nintendo's support here. The Switch will have third party support of its own at launch, no doubt about that.
Why would the people outside of Nintendo's current ecosystem only care about Zelda and not the other games? On what is that based? Your bias that only Zelda could appeal to non-Nintendo fans I assume. I'm 100% convinved that there are more Mario and Pokémon fans who don't own a Wii U than Zelda fans who don't own a Wii U. Mario and Pokémon simply have a much broader appeal. I wouldn't be surprised if Splatoon also became a bigger franchise than Zelda this generation.
