Really dont like the idea of some games only working in handheld mode.

Well for this same reason I expect Nintendo will not be making games that hinge on touchscreen controls.
The controls are still there, because they are still useful for general UI menus and Android/web browser/etc functionality.
Multitouch screens of this size are a commodity product due to smartphones, so excluding touchscreen wouldn't save them much $.
Of course, Android games that depend on touch would not work well when docked, but what can you do?

That ain't happening.   Not unless there is a SCD dock that costs more money with a far more powerful chip. 

I'd expect a bit of a performance jump in docked mode, but 1080p is 2.25x more pixels than 720p,
not a chance in hell the NS is magically overclocking itself 2.25x in performance just because it's running off a dock instead of a battery.

As you bring up idea of needing "extra chip", that isn't much different from activating unused GPU cores when docked...
Sony just specs GPU for 1080p capability at full speed, when in mobile mode in 720p you don't need as many cores activated
So in mobile mode they can turn off a good amount of GPU cores to save power, along with potential downclock as well.
Obviously, as with Xbone/PS4, some games may end up at 900p etc in docked mode, even if chip is specced for 1080p target.

And of course, they could cheap out and make docked mode have zero graphical bonus, but I don't see why that's the only option.
