Because Nintendo and Sony are the only ones considered to have hit such success. Microsoft hasn't hit the jackpot with their gaming division, and neither have Ubisoft or EA to the same extent as Nintendo and Sony. There's probably about two game series whose success could be used to talk about printing money: Call of Duty, and Grand Theft Auto (and specifically GTA V). There was WoW, but it's no longer the huge success it once was. Anyway, it's really hard to rise to a dominant position when you're 'just' a publisher and when we're talking about individual games, it's much easier to hit a dominant position when you're a console company and you have just two competitors. When talking about consoles, if one company hits it big time and the other two don't, you're already in dominant position. Can't say the same about games. Also, games printing money wouldn't really look as good in a GIF.
