GT is probably the best "sim" racer though... but I don't have nearly as much fun with sims as I do arcade racers.

That's Mario Kart wii alone, Mario Kart 8 is not like that.

Even with Mario Kart Wii I'd say it's more like 80% skill, 20% luck.

But yeah, MK8 is definitely the most well balanced, skill based, and fair game in the series, IMO anyway.
