My Wii U is making me erase games before I can add more? I guess 300 Wii U games is the limit...

Delete an icon with the smallest size, with the least amount of play and you should be good.

Also, create a folder. I believe Wii Menu can hold up to 60 folders with I believe can hold 300 within it. Folder count as one. Do you actually have 300 items on your menu? No folder?

Am I understanding this correctly? Either way, hope this helps. I don't think nobody, even Nintendo, for anybody to run into this problem probably.
