As big as possible. If you don't mind your PS4 being ugly, get yourself some addon to support 3,5" HDDs. That way you can get 4 TB, 6 TB or 8 TB. If you don't like that and only want to use 2,5", get 2 TB.
The only reason to get 1 TB would be if you find a cheap offer for a console with 1 TB pre-installed.
500 GB isn't an option at all imo.
