Maybe because she's the most visible character worthy of the term in the past few years. Very appropriate though - that cannot be denied.

Or it is because the term is highly imprecise, vague, debated, poorly defined (see here: http://tvtropes.org/pmwiki/pmwiki.php/Main/MarySue ), and usually only flung as criticism of an unliked important character.

And going by the loosely held set of ideas that passes for the definition of the term, Luke falls just as close to the term as Rey.  I do feel her defeating the villain head on is too fast, but I think that's a failing in writing the villain, not because she is a Mary Sue.
