Not sure what my definitive number one is, but Deus Ex, Mass Effect, and Witcher are very much top of my mind.
It's tough though, because there are so many amazing games throughout the various RPG franchises. The issue though, is that many of them are also riddled with missteps along the way. Some have so many games that the quality varies greatly between them.
