Character modeling is pretty hard (unless you're actually good at it--I'm quite terrible at it) every mod needs someone to make objects and that's probably a good place to start. From what I hear A LOT of mods done online and not all in person fail because it's just too hard to do something like that through email alone.
If you're just looking for experience in making assetts, that's probably not too bad a thing for you. Having a completed mod is always preferable but at least you'll get to work on several different styles. If you're loooking for good links, I can't help you much since I'm really not much of an art person (scripting yes, modeling no) but I'm fairly sure the IGDA forums will have some good resources (though it looks like they're down at the moment).
