with the parry you are behind the enemy and deal extra dmg - btw timing a square hit right in the parry will make it include a slash to the back after which you can follow up with multiple square hits and regain the Ki afterwards with R1 to finish the probably now Ki-less (if not dead) enemy with a triangle grapple

and the just-in-time L1 block seems more risky to me, because usually I'm a bit late with parries if I miss which results in me blocking the enemy's first strike anyway and parrying his second strike if he does an immidiate follow up

Well in fact, my method is less risky because if you miss, you just block the attack, and ive never achieved to do the parry right, this way is easier.

While with the parry to get behind his back, if you fail ( and it seems easy to miss), you are vulnerable.
