I think their bigger problem is with third party, but their first party output was definitely an issue with Wii U.

But beating out the Wii U's output of software in only one year? Not even remotely realistic.

 I think she exaggerated indeed. She's probably implying that it will have a great amount of high profile exclusives very fast... much faster than Wii U. Like, instead of having 8-10 games per year, NX might actually have 20 or something.

Nintendo kind of did that with the GameCube already. Remember it got a 3D Mario, Luigi's Mansion, Pikmin, mainline Zelda, Star Fox, F-Zero, Smash Bros., Mario Kart, Metroid. etc. within its first 2 years. That's why it sold decently well on the beginning.
