My strategy is to simply distance myself from the pack from the get go. It works well online and generally in single player, though the single player has hit me with 3 blue shells in a row (like tonight), though I didn't lose my lead it made it close.
The one map that drives me nuts online is Luigi's Circuit (and probably others, but they don't seem to come up as much) because it's so short and it's very difficult to get away from the pack. I manage, but it's easy to get dicked on that one fast.
