Honestly, Dragon Quest 7 shouldn't be your first run at the series. It is not well paced and is easily the most difficult of the franchise to get into. Not that it's not rewarding, but this game is best for fans, not beginners. Its one of the more highly liked game among fans though.

the best ones to start with are Dragon Quest 4 or 5 as they're the most solid entries in the franchise. They are both well paced and 5 has one of the most interesting stories of any RPG ever and is a favourite among fans.

Of Dragon Quest 7 and 8, 8 might be the better starter. It is the prettier game, and is easily the most popular among non DQ fans. The pace is sluggish compared to the others due to the wide open 3D environments and poor implementation of features. The game ends up feeling about 30 hours too long by the end. It is still the better of the two games to start with: if you don't have access to any of the others.

If you play DQ 1-3, play them in order, 1 is short and simple but fun. 2 advances the formula, but is still fairly short. 3 is a story which wraps up everything in the 1 and 2 worlds, and is FAR bigger of a game. Even if you don't want to play 1 and 2, I would still recommend playing at least an hour of 1 (it's probably a 3-5 hour game) and an hour or two of part 2 before playing 3 - luckily both games are very cheap on mobile, and they play much better than other Mobile RPGs. Square Enix opted for a very functional port on the DQ titles, and not weird fancy stuff like they have done in other games.
