I'd say it doesn't really matter.
If you're watching 1-2-3-4-5-6 then of course the story is in order, which is nice and it'll get better and better, because it's no big secret that the prequels are held in a much lesser regard than the originals in general. So watching 4-5-6-1-2-3 is probably a safer bet if you don't want to risk potentially being turned off by 1. Since 4 was made first, it's basically a fresh start and it won't feel like you don't know what's going on. On the other hand 1's not "unwatchable" either. So yeah, I'd say it doesn't really matter. Do keep in mind that Star Wars is not really sci-fi though like Star Trek or Battlestar Galactica. It's more a fantasy in space, but the genres overlap of course.
I realize this isn't much of a definitive answer to your question however, just me babbling.
