I can usually get away with all those sorts of jokes (racist, religious, sexist, etc etc.) in front of people in person because people know I don't mean what I say. I think the key is to know your audience, understand their limits, and then make the delivery of whatever it is you say (that may be controversial) is done well. If not you'll end up looking like an asshole, which admittedly has happened to me -but that's the risk you take when taking on sensitive topics
