Christ is technically of Hewbrew and Greek origin and was used as a title (rather than stricly a last name) and given to Jesus after his death (notice that Mary and Joseph's last name is not Christ).  The concepts of Christmas, originally known as Christ's Mass, began long before the modern form it.  Long before Jesus himself even.   December 25th technically isn't even his birthday.  That's sometime in the Spring and we're not certain of an exact date.  December 25th was chosen to celebrate it sometime after the 4th century because it was used by a multiude of cultures for countless festivals and other celebrations.  Christmas-like celebrations on December 25th (near the winter solstice) have been documented for centuries before Christ's time.

Happy Holidays was never meant to remove Christ from the party, as it were, but to simply encompass all the various celebrations that coincide during that period.  It's not an exclusive statement but an inclusive statement.
