Because of innovation Nintendo puts in them, because of the new stuffs and mechanics, that make them completely fresh and new thirty years later. Seriously, from amount of totally new staffs and mechanics Nintendo puts in every new 3D Mario game or Zelda for instance some other company would made 2 or 3 games.

Also it not like Nintendo put all innovations in same old IPs, Splatoon is latest example of completely new, fresh and innovative game that you cant compare with any other game on market, and guess what its total hit. Yes they are completely fresh and new, Mario 3D World has 93 on metascore, it's one of the best games of 2013, and it has great sales, you cant have all that if you have just "same old game" for thirty years. Compare me Mario 3D World and Super Mario NES!?
